How Does Your Sense of Smell Work?

You can smell coffee from across the room because tiny molecules from the coffee are actually making their way through the air to your nose. When those molecules reach special receptors inside your nose, they create signals that travel to your brain. Your brain reads those signals and recognizes the smell as coffee.

So what you experience as a smell isn’t something floating through the air fully formed. What’s traveling through the air are molecules. Your nose detects them, and your brain turns that information into a scent you recognize.

The Molecules Have to Reach Your Nose

Anything you can smell is releasing molecules that are able to travel through the air. Some of them enter your nose as you breathe and reach a small area high inside the nasal cavity where your smell receptors are located.

Those receptors don’t work like individual detectors for coffee, roses, smoke, or every other thing you might smell. Instead, different odor molecules activate different combinations of receptors, creating different patterns of activity. Your brain can use those patterns to tell one smell from another. That also explains how the same nose can recognize an enormous range of scents without needing a separate receptor for every one.

Your Brain Figures Out What You’re Smelling

Once the receptors respond to odor molecules, they send signals along nerve cells toward your brain. This is where detecting something and recognizing it come apart a little. Your nose picks up the chemical information, while your brain makes sense of the signals as fresh-cut grass, popcorn, gasoline, or something else.

Previous experience also helps with recognition, which is why a familiar smell can seem identifiable almost immediately. Smell also has strong connections with memory and emotion. A scent can bring a particular person, place, or experience to mind before you’ve consciously thought much about what you’re smelling.

Food Reaches Your Smell Receptors Another Way

Smell isn’t limited to molecules coming in through your nostrils. When you eat, molecules released from food can travel from the back of your mouth and throat into your nasal cavity, reaching the same smell receptors from the other direction.

Your brain combines those signals with what your taste buds are detecting, and together they create much of what you experience as flavor. That’s why a strawberry tastes like much more than something sweet and a little acidic. Its aroma helps give it the familiar flavor you recognize as strawberry.

This also explains why food can seem unusually bland when you can’t smell very well. Your tongue can still detect basic tastes, but you’re missing some of the aroma that normally helps distinguish one food from another.

Whether you’re catching the smell of coffee from another room or recognizing the flavor of something you’re eating, the same basic process is at work. Molecules reach receptors in your nose, the receptors respond, and your brain turns those signals into the smells you know.
