How Does Your Sense of Taste Work?

Your sense of taste is actually a team effort between your mouth and your brain. When you take a bite of something, taste receptors in your mouth pick up basic information about the food and send those signals to your brain. But your brain is also getting information from your sense of smell, along with things like texture and temperature. It puts all of that together into the flavor you recognize.

Your Taste Buds Pick Up What’s in the Food

When you eat something, it mixes with the saliva in your mouth. That matters because your taste buds can only pick up what’s in the food once some of it has dissolved. From there, receptors in your taste buds send information to your brain about what they’re detecting.

The information sent is pretty basic. Your taste buds don’t know that you just took a bite of chocolate or a potato chip. They’re picking up things like sweetness, saltiness, sourness, bitterness, and umami, and your brain has to do the rest.

Smell Adds More Details

Your sense of smell helps fill in the details that your taste buds can’t provide on their own. As you chew, aromas from the food travel from the back of your mouth up into your nose, where they reach your smell receptors. That information helps distinguish foods that may share some of the same basic tastes. A strawberry and a piece of chocolate can both be sweet, but they certainly don’t taste the same.

You can really notice how much smell contributes when your nose is congested. You may still pick up sweetness, saltiness, or sourness, but a familiar food can seem surprisingly bland or harder to recognize. Your taste buds are still picking up the basic tastes. You’re just missing some of that smell information that gives the food more of its recognizable flavor.

How Food Feels Matters Too

What food feels like in your mouth is another layer. A potato chip wouldn’t seem quite the same without the crunch, just as ice cream wouldn’t seem quite the same without its creamy texture. Even temperature becomes part of the experience, whether you’re having a bowl of warm soup or a glass of iced coffee.

Then there are sensations like spicy heat. When a hot pepper makes your mouth feel like it’s burning, that feeling isn’t actually a taste. The pepper is triggering other sensory nerves in your mouth that respond to things like heat and irritation.

Mint works in a similar way, only it can make your mouth feel cool instead. None of these sensations come from your taste buds, but when you’re eating, they don’t feel separate from everything else. They just feel like part of the food.

Your Brain Turns It All Into Flavor

Your brain is where everything finally comes together. It takes what your taste buds are picking up and combines it with the smell, texture, temperature, and other sensations that come with the food.

You don’t take a bite of pizza and think about the saltiness, the smell, the warmth, and the texture as separate things. It all comes together as the familiar flavor of pizza.

That’s why taste and flavor aren’t quite the same thing. Taste is what your taste buds pick up. Flavor is what you experience when your brain puts taste together with everything else that comes with a bite of food.
